100% Whole Wheat Banana Bread (16.5)

I'm trying something new today. I'm going to annotate the screen shots of the recipe as I go along. Like notes in a recipe book. 



In the very middle, at the top of the loaf, the bread was still raw. Next time, I'm cooking this in muffin tins. It's crazy to spend an hour cooking a loaf of bread, and still have parts be raw. 

Here's my secret: I made the bread, and didn't tell anyone that it was 100% wheat. As you can see from the scores, the kids liked it pretty well. I thought it was fantastic. In fact, I could hardly tell that it was wheat. The heartiness of the wheat is balanced by the moisture from all those bananas, and the honey.  The texture is a little different from my normal banana bread, but not much.  Now if only I could make a 100% wheat cookie taste good...

  1. Looks delicious! I really like that recipe. I stopped getting raw middles when I switched to metal pans. The glass took FOREVER to bake. I also like the subtle crisping the metal gives. Also, I started using an instant thermometer and temping it. No more raw middles, and I’d had my share!
