Old Fashioned Apple Cake with Brown Sugar Frosting (18.5)

 

Putting fresh fruit into desserts can be a tricky business. There is a lot of moisture to take into consideration. Since this recipe had 333 reviews, and almost 5 full stars, I had faith that the recipe masters at King Arthurs had gotten it right. 


There is waaaayyyy too much frosting for this amount of cake. It spilled down in the corners and over the sides of the cake itself. The frosting was also overly sweet. If you read the tips at the bottom ( not shown in the picture), it specifies how you can decrease the amount of powdered sugar. I would absolutely do that. I would also increase the salt slightly, and use apple cider in place of the some of the milk. 
Next, the cake itself. The flavor was fantastic, but it was incredibly crumbly. I think it was in part from the moisture of the apples. But mostly I think it was the amount of apples and nuts. There were just so many pieces in there that the cake couldn't form solidly. I know it's an apple cake, and it was delightful to have so many apples in each bite, but it was a technical flaw.  Next time I would use 3/4 the amount the recipe specifies.  
As you can see from the scores below, I seem to be the only one who noticed/cared about any of those things. Everyone else gobbled it up without a second thought. Next time, with those tweaks, it should be a winner for everyone.
