Cinnamon Star Bread (23)




I ran into a dilemma right when I started this recipe. I measured out the flour by weight. Then I poured in the potato flakes by weight. As I was pouring, I was thinking to myself "This is WAY more than 1/2 cup". But I just kept pouring all the way to 46g. I went forward with the recipe as written. 
But to hedge my bets, I started a 2nd batch, in which I actually measured 1/2 cup flakes (which weighed in at 37g). At the end of the day, in a side by side comparison, I liked the first batch best, with 46g flakes. Stick to the weight!
All the other tips and tricks I wrote into that picture of the recipe above. 
This recipe is a nod to the cinnamon roll. The enriched dough has a tight crumb, is rich, and just a touch sweet. The cinnamon and sugar inside don't make a goo like a cinnamon roll, but evoke the same flavor profile. Obviously the look is much more striking, yet no that time consuming or difficult to make.  I love all the textures from the layers. Basically, I think this bread is amazing and I'm sad it hasn't been part of my life until now.
