Gingerbread Cookies (17.5)



Who says gingerbread is only for Christmas? I love gingerbread all year long. I made these cookies for eating only--they're a little thin and soft for building houses, yet firm, without breaking your teeth. 



They have a very strong molasses flavor. Depending on the brand and strength of your molasses, you may want to decrease the amount. It was borderline bitter on the front end. The middle was filled with notes of sweetness and spices, and it finishes with a little salt on the end. I wasn't a fan of the salty finish, so I would decrease the salt next time. Also, the ginger flavor is mostly lost to the molasses. I'd call it a molasses cookie. 

Overall, the texture was great, the flavor was classic, and with just a few tweaks, it would be a nice classic gingerbread cookie. Next time, I'm going to put small pieces of crystalized ginger in there an see if I can punch that note up past the molasses.
