King Arthur's Original Cake Pan Cake (19.5)

 

I was pretty shocked my youngest two liked this cake as much as they did, because it was defiantly more in the realm of semi-sweet, and they are milk chocolate kids. 

I had problems with a couple things:

First, I felt there were some textural issues in the finished cake.  I'm accustomed to cakes with eggs and milk. The lack of protein really changed the structure of the cake. It looks the same (tight, moist crumb) but did not taste the same. 

Second, I felt the cake lacked a deep chocolate flavor. Perhaps next time I'll try the natural coca, but 1/4 cup is really not a lot of cocoa. 

All in all, this recipe didn't have what it takes to unseat my current favorite chocolate cake recipe. It was good, but not good enough.
