Butterflake Herb Loaf (21.5)
I had very few problems making this dough. First, I felt like I didn't get a good rise from the dough (both the first and second time). Next time, I will let it raise longer (2 hours+).
Second, I didn't love the savory filling recipe. This is undoubtedly because I fiddled with it, and omitted things that I shouldn't. However, my kids hate onion and caraway. It's also because I messed up and used a full clove of garlic, when I should have used half. My bad. So next time, I'll use less garlic, and toast it first to draw out a more nutty side.
Also, the sweet filling didn't have nearly enough flavor. But I did love the nuts I sprinkled inside. Next time I'll try a spice blend. I think some apple pie spice would have been fantastic.
It will just be a matter of trial and error with the fillings until I stumble upon the perfect blend for our particular tastes. But I do have this great idea to make brown butter, then let it solidify, add in the spices and honey, and then use that on the dough. Also maybe a pesto/parmesan filling for the savory side... so many possibilities!
I loved the texture of the dough. It was thin and flaky. It reminded me of a thin slice of biscuit. I loved that the kids could just tear off a piece and go play. I loved that every single bite had consistent amounts of filling.
Lots of potential in this recipe!
