Fudge Brownies (23.5)

 


This was a very quick, simple, straight forward recipe. As is the case with these sort of recipes, the ingredients make a massive difference. 
First, ensure you're using DUTCHED cocoa.  As a general rule, if it doesn't say "Dutch Process" right on the front, it's natural coca. Your brownies will come out tasting entirely different, due to the acidity of the cocoa.
Next, espresso powder. It's only 1 teaspoon, and it's optional. However, this will kick up the flavor of the cocoa significantly, and unless your taste buds are trained, you will not pick out the flavor of the espresso itself. 
I'm sure novels have been written about the many brands and varieties of vanilla. I recently read an article form ATK that in a blind taste test, they preferred the taste of imitation vanilla. Imitation! With an entire tablespoon going into this brownie, you better believe the flavor of vanilla you choose will change the flavor of the whole brownie overall. 
Lastly, the chocolate chips. The recipe does not specify what % of chocolate to be used. You can use dark chocolate chips. You can use milk chocolate. You can mix. Each bite of brownie had quite a lot of chocolate chips, so this also becomes a large factor in the taste. 
As the scores will show, we loved these brownies. Dustin and I took .5 off because we felt it needed the flavor and texture of nuts, and had too many chocolate chips. But seriously, that was our one small (very fixable) complaint. Brownies are a real crowd pleaser because they offer something for everyone. Whether you a corner piece person, edge piece, or center piece, this dessert will hit the spot for you. If you prefer a more cake like brownie, read the article in the center of the recipe. From now on, when I need to make brownies, this will be the recipe for me!
